Yesterday in the heart of London’s West End, a cupcake inspired by Africa wowed some of the UK’s top bakery and patisserie chefs to be awarded the National Cupcake Awards title of ‘Most Innovative Cupcake of the Year 2011’. Beating off competition from bakers drawn across the UK, the stylishly titled ‘Midnight Safari Cupcake’ was the creation of cctreats, whom African Daydreams profiled about a month ago.
A delectable concoction of Rich Chocolate and Amarula Fluff, the Midnight Safari Cupcake is a chocolate lovers delight and literally celebrates the ‘Spirit of Africa’ from the awe-inspiring savannah plains of Zimbabwe to the use of key ingredients representing some of the best Africa has to offer in the form of Divine Chocolate from Ghana and Amarula; a South African fruit cream liqueur made with fruit from the Marula Tree, a tree found across the Southern African region. The cupcake itself is a rich dark chocolate sponge topped with an Amarula Liqueur Brown Sugar Swiss Meringue. What makes the cupcake extra special is the unexpected element hidden in the centre; one bite reveals a hard chocolate shell filled with Amarula infused Marshmallow Fluff. To finish the cupcake is topped off with shavings of dark chocolate and a dark chocolate disc dusted with shimmering gold.
